Mixes up thick and smooth, and the vanilla is subtle enough that I can actually taste the almond milk underneath. The vanilla flavor is pretty mild, which works for me since I'm mixing it into smoothies. I did notice it digests much easier than other vegan powders I've tried, so the PDCAAS claim seems legit. Just wish it dissolved a bit more smoothly in cold water.
